Lafayette's CAF Restaurant Blends Global Flavors with Acadiana Roots

"We're sourcing lemongrass grown just outside of town, using local free-range chickens for the broth, and even experimenting with incorporating Louisiana hot sauce into the accompanying dipping sauce. The goal is to take these dishes and make them... Lafayette."
This dedication to local ingredients is more than just a culinary trend; it's a core principle for Decuir and his team. The restaurant actively partners with area farmers and fishermen, prioritizing seasonal produce, sustainably raised meats, and fresh catches from the Gulf. "We're constantly juggling the need to keep prices accessible while also fairly compensating our local producers," Decuir admits. "It's a challenge, but it's one we're passionate about. The location within the Community Arts Front headquarters further enhances the dining experience. Guests can browse art galleries before or after their meal, fostering a synergy between culinary and creative expression.
